These Old Hills Menus

Supper Table
I still can remember the way the table used to look at mealtime. The table was covered with a red and white checkered oilcloth. Setting on that were three or four big dark brown crock bowls. In one would be fried taters; in another would be shuck beans and another full of mustard greens. Cornbread was on a pretty good sized blue glass plate. There was always cow's milk to drink and next to it a big half-gallon fruit jar full of honey from one of the bee gums in the backyard. There was hog meat during the wintertime.
Old Times

I can see green beans strung up on long sewing thread and hanging down from the 2 by 4 rafters. I can smell the sweet smells of mustard greens cooking on her old wood cook stove

Then all at once Virgil looked over at me and said, "Tony, now I want you to go with us too. We will eat beans, taters, cornbread, and whatever else we can catch or kill. You'd like that wouldn’t you?" I thought for a second or two and said, "Why yeah, that sounds good to me.

We went on down the river and did the same thing again. Then we went back to the campsite. By this time Art had supper about done with soup beans and cornbread that he had been cooking since early morning. Along with it we had green onions from Virgil's garden. It sure was good eating there on that riverbank.
A Camping Breakfast
By the time I got up Art had me a plate fixed to eat.I still can remember what we had that morning for breakfast. We had fried eggs, gravy, and fried turtle with cornbread that was left over from supper the night before. When we got done eating I went down to the river and washed my plate and coffee cup along with my spoon.
Breakfast
I remember it was real cold outside. There was about a half of an inch of snow on the ground. By the time we got back to the house Mom had breakfast ready to eat. She had biscuits, gravy, fried eggs and sorghum molasses with sweet milk.
Supper after a Hog Killing
After Pete and Papaw left we packed the meat to the smokehouse. Dad rubbed salt on the meat and hung it up on the 2 by 6 rafters that were overhead. We went to the house taking a big mess of meat with us. Later that evening after the milking was done we had us a big, good supper with backbones, ribs and taters all cooked together. We had cornbread, onions and sweet milk to drink.
Going Fishing
Cook us a big kittle of taters and a pone of cornbread we will all walk down to Horse Lick Creek and go fishing today. We might get us a good mess of fish. So Letha went to cooking and Jake and your dad went out and dug up a lot of worms. Now when the taters and cornbread got done Letha put the taters in an eight pound lard bucket and she slowly pushed the lid down on the bucket. Then she got her another eight pound lard bucket and in it she put the cornbread and green onions and the forks to eat with.

Chicken and Rice Recipe

Tony’s Chicken and Rice.
Real good on a cold day

I went to Save a Lot and got a chicken, some rice, a bell pepper, one hot jalepeno pepper and a bag of onions. I went back to Mom's and began to cook. I put the chicken in a kettle of water and put it the stove to cook. Then I cut up the peppers and the onions. But just one onion. When the chicken got done, I took it out and deboned it. Then I put a cup of rice and onions and the peppers all in the kettle with the hot water to cook.When the rice got done I put the chicken back in the kettle with the peppers and onions and let it all cook together for about 15 minutes. Then me and Mom sat down and had us a good dinner. Oh yes, I also put three tablespoons of salt in it as well. You can eat bread or crackers with it... whatever you want. I left the chicken skin on for flavor but you can take it off when you want to.
